Apple Season

Fall is here (as far as I'm concerned)... and with the fall comes apple season! This year Justin and I have become big fans of a local farm where you can "pik yur self". During the summer we picked strawberries and ollalieberries (a blackberry/boysenberry hybrid)... and now, we've enjoyed their apple orchard! And yes... that is the slightest beginning of a tummy. Yikes!

Yummy! These were the Red Delicious Apples. I don't know why... but I was surprised that the apples were so dull and dingy while on the tree.

We exercised great self control and only picked 20 pounds of apples... which was still A LOT of apples! So what exactly does one do with so many apples???


Make APPLE BUTTER!!! We made about 20 jars of apple butter to give away as Christmas gifts. I was surprised how simple it was... and it tastes SO YUMMY!
REVISION #1 - Here's the Apple Butter Recipe...
5 lbs of apples
2 cups of apple juice
Sugar
1 tsp ground cloves
3/4 tsp allspice
3 tsp cinnamon
3/4 tsp nutmeg

Peel, slice and core the apples. Add the apple juice and cook slowly until apples are soft. Put through a food mill. Add 1/2 to 3/4 cups of sugar per cup of pulp (about 3 cups of sugar). Add spices. Cook over low heat, stirring constantly, until sugar dissolves. Continue to cook until mixture sheets from spoon.
